It's that time of the year that we pull out our trusty ol' slow cooker. After this rich savory (and might we add super quick) meal, we find ourselves wondering why we do not use our trusty slow cooker more throughout the year?!
As the holidays near closer and closer we have found that recipes in the slow cooker are quick, easy and tend to be full of flavor! This French onion & shiitake soup was no exception! We had our family asking for THIRDS!!! Home run!
We no more delay we introduce: Slow Cooker French Onion & Shiitake Soup
Serving 12 (we like making extra for lunch)
Ingredients
4 large white onions, sliced
4 tablespoons butter
1 pound shiitake mushroom (you can do a 1/2 pound, we just love shiitakes)
2 1/2 tablespoons brown sugar
64 oz Beef Broth
2 tbsp Worcestershire sauce
2 clove minced garlic
10 sprigs fresh thyme (we grabbed a small hand full)
2 Bay Leaf
9 slices dry french bread
¾ cup mozzarella cheese, shredded
6 tablespoons fresh parmesan cheese
Instructions
In a large non-stick pan, cook onions, butter, shiitake mushrooms and brown sugar over medium low heat until golden and caramelized. (About 20 minutes). It is best to cook these on medium to low heat, you do not want them crisping up.
Once they have reached their golden translucent color, add them to the slow cooker along with remaining ingredients except bread and cheeses.
Cook on high for 3 hours.
Remove and discard bay leaf and ladle the soup into bowls. Top with dry bread slices and cheeses. Broil on high for 2 minutes or until cheese is melted and browned.
